Giles Legg is the owner and creator of Seedling Cafe's unique menu and specialty coffee. An experienced entrepreneur and barista, Seedling is Giles' latest venture, inspired by the healthy lifestyle he enjoys.
Giles is meticulous in his attention to detail in making your daily caffeine fix, with freshly ground signature Seedling blend and any special request you might throw his way!

Also a bit of a handy man, you'll see Giles' touch in every corner of Seedling, from the hand-sanded bench seats to the carefully placed lighting to create a little oasis in the heart of Melbourne.
On the weekends, Giles enjoys hanging out with his partner Olivia and their little boy Jeremy, watching soccer highlights, checking out new cafes or tinkering on a new idea or project.
Georgia Clarke-Edwards is our inspiring and creative force at Seedling. Georgia is an experienced chef and trained holistic health coach who is passionate about nutrition, health and well-being. Georgia's family is from a small farm in New Zealand where fresh produce, unprocessed food and cooking with the seasons were a part of daily living. She cooks with locally and ethically sourced ingredients and flavours inspired by her travels around the world.
"I love showing people that eating healthy does not mean sacrificing good food. With a few good quality and fresh ingredients you can create dishes that are as delicious as they are nutritious. I enjoy finding innovative ways to recreate dishes and 'treats' and serve them up in a way that fuels your mind and body. I believe in the Hippocrates saying of "Let food be thy medicine and medicine be thy food".
In her spare time, Georgia balances her love of food, coffee and red wine with keeping fit with running, yoga or training in the gym, and enjoys hiking or camping on the weekends.
Rob Goodwin is passionate about both food and fitness, and is a multi-talented chef with over 15 years experience. Rob takes great pleasure in creating, cooking and serving high quality healthy food, having worked across some of Australia's and the UK's great cafes and restaurants. Rob also has a love of sport, fitness and education, being a qualified trainer and fitness coach, and holding a degree in Sports Science and Psychology.
In between being Head Chefs and travelling between Melbourne and UK, he coached tennis, was a personal trainer, was a school teacher, and taught kids how to prepare healthy meals.
In his down time he plays sport, reads, plays music and loves to look out for exciting new travel adventures.
